Homemade „Twix“ bars
Feed My Sister is a blog by two sisters Rūta and Asta [Ru:tə ənd A:stə]. One of them lives in Vilnius, the other in London, and they keep their connection strong by sharing recipes back and forth!
This recipe is a treat made from natural ingredients that tastes like the legendary “Twix” bar we all know so well. A simple biscuit base and a soft date caramel covered in dark chocolate. Sometimes that’s all you need.
Do look for the softest dates you can buy to get that luxurious texture which brings the rest of the flavors together.
INGREDIENTS:
8-10 bars
– 60 g rolled oats
– 60 g ground almonds
– 30 g coconut oil
– 40 g maple syrup
– 2 tsp almond butter
– 200 g Medjool dates (without stones)
– 200 g dark chocolate (min cocoa 70%)
1. Preheat your oven to 180°C/fan.
2. Put the coconut oil into a small saucepan over medium heat and leave to melt. Once it's melted, add maple syrup and bring it to boil.
3. In a food processor, blitz oats until you have a flour-like consistency. Add ground almonds, coconut oil mixed with maple syrup and blitz it until you have a smooth dough.
4. Use your hands to form it into a 1 cm deep rectangular shape. Put it into the bottom of a lined baking tray and leave it in the fridge for 10 minutes. Take it out of the fridge and cut into 8-10 bars.
5. Bake it for 10 minutes until golden. Let the bars cool in the tray.
6. In the meantime, add dates to a food processor and blitz until you have a smooth paste. Then add almond butter and mix again.
7. To assemble your bars simply mould the caramel onto a biscuit base.
8. Melt chocolate and dip your bars. Make sure you cover all sides. Place on a clean baking sheet and leave to set.
9. Store in an airtight container – they will stay fresh for 4 days.
